Ingredients

  • 1 Cup mayonnaise
  • 1/4 Cup vinegar
  • 1/4 Cup water
  • 1/4 tsp minced garlic
  • 4 Tbs mustard

  1. Mix all ingredients well.

Mushroom Salad Recipe

Mushroom Salad

Ingredients

  • 3-4 portabella mushrooms
  • 1 bag lettuce
  • 1/2 cup cherry tomatoes
  • 1/3 cup honey glazed almonds
  • Dressing: 1/2 cup oil
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/2 cup ketchup
  • 1 clove garlic, crushed
  • 1/4 tsp dry mustard
  • 1/2 tsp salt

Cooking Directions

  1. Cube and broil mushrooms for 10 minutes, mixing after 5 minutes.
  2. Mix dressing well.
  3. Mix all salad ingredients and pour dressing over them.

Pasta Salad Recipe

Pasta Salad

Yield: 8 servings

Ingredients

  • 8 oz macaroni
  • 1 cup celery, sliced
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1/2 cup carrots, diced or shredded
  • 1/4 cup onions, diced
  • Dressing: 3/4 cup mayonnaise
  • 2 Tbs vinegar
  • 1 Tbs mustard
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp pepper

Cooking Directions

  1. Cook pasta.
  2. Add vegetables to pasta.
  3. Mix dressing and pour over vegetables and pasta.
  4. Mix well.
  5. Cool and serve chilled.

Mock Caesar Salad Recipe

Mock Caesar Salad

Ingredients

  • 1 Cup Mayonnaise
  • 1/4 Cup sugar
  • 1/4 Cup vinegar
  • 3 cloves of crushed garlic
  • 1/8 tsp white vinegar
  • 1/3 cup water
  • 1/2 Cup slivered toasted almonds
  • 1 box garlic croutons
  • 2 lb bag of lettuce
  • 1 cup craisins

Cooking Directions

  1. Mix first 6 ingredients together well.
  2. Pour over lettuce, almonds, croutons, and craisins.

Chicken Caesar Salad Recipe

Chicken Caesar Salad

Ingredients

  • For the chicken: 1 Tbs Dijon Mustard
  • 1 Tbs mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup bread crumbs
  • 6 chicken breasts
  • Dressing: 1 clove crushed garlic
  • 1 Tbs lemon juice
  • 2 Tbs oil
  • 1/3 cup chicken broth
  • 2 tsp Dijon Mustard
  • 1/2 tsp pepper
  • 1 tsp soy sauce

Cooking Directions

  1. Mix together first four ingredients for the chicken.
  2. Slice chicken into thin strips and coat with sauce.
  3. Dip chicken into bread crumbs and place into pan.
  4. Drizzle oil over chicken.
  5. Bake 15 minutes at 350.
  6. Allow chicken to coo.
  7. Mix all ingredients for dressing and pour over lettuce, croutons and chicken.

Craisin Salad Recipe

Craisin Salad

Ingredients

  • 1 lb frozen broccoli
  • 1/2 package slivered almonds
  • 8 oz dried craisins
  • 1 small red onion, circle sliced or cubed
  • 1-2 carrots, shredded
  • Dressing: 1/2 Cup mayonnaise
  • 3 Tbs sugar
  • 3 Tbs lemon juice

Cooking Directions

  1. Partially defrost broccoli and cut into small pieces.
  2. Toast almonds for 15 minutes until slightly crisp.
  3. Mix all ingredients of dressing well and pour over broccoli, almonds, craisins, and carrots.

Potato Salad Recipe

Potato Salad

This salad can be served warm or cold.

Ingredients

  • 3 lbs potatoes, peeled
  • 1 large green pepper, finely diced
  • 1 large carrot, finely diced
  • 2 pickles, finely diced
  • 2 scallions, finely diced
  • Dressing: 6 heaping Tbs mayonnaise
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 2 Tbs lemon juice
  • 1/2 tsp Dry mustard (optional)

Cooking Directions

  1. Cover and cook potatoes for 40 minutes.
  2. Rinse cooked potatoes in cold water.
  3. While the potatoes are still warm, peel and cube them.
  4. Combine with the other vegetables.
  5. Mix dressing well and pour over vegetables.

Cole Slaw Recipe

Ingredients

  • 1/2 onion
  • 1 Tbs vinegar
  • 1 Tbs oil
  • 2 tsp sugar
  • 1/4 tsp salt
  • dash pepper
  • 1/2 Cup mayonnaise
  • 1 lb cabbage

Cooking Directions

  1. Chop onion in food processor with four 1/2 second pulses.
  2. Mix together all other ingredients.
  3. Mix into cabbage.

Euro Salad with Fruit Recipe

Euro Salad with Fruit

A refreshing beautiful salad.

Serving Size: 12-15

Ingredients

  • 2 16 oz pkg Euro Salad or Romaine Lettuce
  • 2 mango, cubed
  • 1 box fresh strawberries, sliced
  • 3/4 Cup Craisins
  • 1 lb honey glazed almonds
  • Dressing: 1/4 Cup vinegar
  • 1/2 Cup sugar
  • 1/2 Cup oil
  • 1 tsp salt

Cooking Directions

  1. Stir dressing ingredients over low flame for 5 minutes.
  2. Cool.
  3. Mix ingredients of salad.
  4. Pour dressing over salad right before serving.

Mushroom Turnovers Recipe

Mushroom Turnovers

Cook Time: 15 minutes

Yield: 18 turnovers

Ingredients

  • Dough: 8 oz whipped cream cheese
  • 1 stick butter, softened
  • 1 1/2 C flour
  • Filling: 1 large onion
  • 8 oz mushrooms, finely chopped
  • 3 Tbs butter, melted
  • 1/4 Cup sour cream
  • salt and pepper to taste
  • 2 Tbs flour

Cooking Directions

  1. In a large mixing bowl, whisk cream cheese and butter together.
  2. Slowly add flour to form dough.
  3. Don\'t over mix it.
  4. Filling: Saute onion in butter over low heat until onion is translucent.
  5. Add mushrooms, sour cream, salt and pepper.
  6. Sprinkle 2 Tbs flour into mixture and cook 1-2 minutes.
  7. Roll dough so it is 18\"round and cut out 2\" circles using a glass.
  8. Place 1/4 to 1/2 tsp of filling in each round circle.
  9. Fold over and seal by pressing edges with a fork.
  10. Bake on an non-greased cookie sheet at 350 for 15 minutes.
